French toast for steady blood sugar levels

I’m loving this low carbohydrate French toast at the moment! It’s seriously tasty and it doesn’t make your blood sugar levels go through the roof, resulting in sustained energy and feeling satisfied until lunch.

It might have a couple more steps involved but after a few times making this, you’ll be able to whip this up in moments!

French toast

Ingredients

  • 1 egg

  • 2-4 drops stevia, e.g. NirVana Organics Stevia Liquid Concentrate

  • 1/2 tsp vanilla extract

  • A pinch of salt

  • 1 slice high protein low carbohydrate bread, e.g. Burgen Lower Carb High Protein Sunflower & Linseed

  • 1 heaped tbsp natural Greek yogurt, e.g. Farmers Union Greek Style Natural Yoghurt

  • 1 tbsp nuts/seeds, e.g. flaxseed meal, pumpkin seeds, sesame seeds, roasted almonds

  • 1 tsp date syrup (optional)

Method

  1. The night before, transfer the bread from the freezer to the fridge to defrost.

  2. In a medium sized bowl, whisked together the egg, stevia, vanilla extract and salt. Place the bread into the bowl and allow it to soak up the egg mixture on both sides.

  3. Add a small amount of butter to a frying pan and heat on a medium heat. Once hot, add the bread to the pan and cook on both sides until golden. Transfer to a serving plate.

  4. Top with your choice of yogurt, nuts, seeds and syrup. Enjoy!
