Cauliflower rice (low histamine, lectin, oxalate and carbohydrate)
When packed with flavour, such as garlic and fresh coriander, I find cauliflower rice to be a satisfying alternative to rice and it’s a good way to sneak in some extra vegetables.
Give it a try, you won’t be disappointed.
Cauliflower rice
Serves 2-3
Ingredients
2 tsp ghee
1 large clove garlic, thinly sliced
½ cauliflower head, grated
½ tsp salt
½ cup fresh coriander, chopped
1/2 tbsp extra-virgin olive oil
Method
Heat the ghee in a frying pan on a medium to high heat. Add the garlic and cook until lightly golden.
Add the cauliflower and salt. Cook until golden, stirring often.
Remove from the heat and stir through the coriander.
Serve and drizzle over the olive oil.
