How to cook fresh fish

Recently speared this lovely flathead out the front - 70cm and 4kg!

Serves 2

INGREDIENTS

  • 2 large fresh fish such as tailor, parrot fish and blue-eye cod (blue-eye trevalla)

  • 1/4 cup plain flour

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • Juice of 1/2 a lemon

  • Fresh mango, cut

  • Shredded coconut

METHOD

  1. Place flour, salt and pepper in a freezer bag.

  2. Add the fish fillets.

  3. Seal and shake the bag to coat the fish well.

  4. Place a large, heavy based pan on medium to high heat with “a couple good knobs of butter” and 1/2 tbsp olive oil.

  5. Cook fish for 3 minutes on either side.

  6. Squeeze over the lemon juice and flip the fish again for another 10 seconds.

  7. Serve on a plate, seasoned with additional salt and pepper. For a summery taste, add fresh mango and shredded coconut.
