How to cook fresh fish
Serves 2
INGREDIENTS
2 large fresh fish such as tailor, parrot fish and blue-eye cod (blue-eye trevalla)
1/4 cup plain flour
1/2 tsp salt
1/2 tsp pepper
Juice of 1/2 a lemon
Fresh mango, cut
Shredded coconut
METHOD
Place flour, salt and pepper in a freezer bag.
Add the fish fillets.
Seal and shake the bag to coat the fish well.
Place a large, heavy based pan on medium to high heat with “a couple good knobs of butter” and 1/2 tbsp olive oil.
Cook fish for 3 minutes on either side.
Squeeze over the lemon juice and flip the fish again for another 10 seconds.
Serve on a plate, seasoned with additional salt and pepper. For a summery taste, add fresh mango and shredded coconut.
